Vegetables for Breakfast

To fit more vegetables into your diet try looking at breakfast for some unexpected, easy-to-prepare dishes. In this demonstration, Annie will discuss how different vegetables pair with eggs and other morning favorites and how they can also take the form of a simple accompaniment to whole-grain toast. She will share ideas for make-ahead dishes and items you can whip up the morning-of. You’ll get to sample: Spinach and Quinoa Breakfast Scramble, Day-After Frittata, Eggs and Greens on Toast, Avocado Toast, and Mixed Vegetable Hash. Additional recipes will be included in the handout.
